Roasted Cinnamon Pecans

...a close fascimile of Trader Joe's Glazed Cinnamon Pecans. Walnuts are a good substitute for the pecans. Cookgirl has been officially banned from all Trader Joe's on the West Coast. I knew it would happen eventually. I am now forced to wear my Groucho Marx glasses to shop at any Trader Joe's.

Ingredients

  • raw pecan halves2 cups
  • unbleached cane sugar2 tablespoons
  • brown sugar2 tablespoons
  • canola oil1 1⁄2 tablespoons
  • real butter1 tablespoon

    melted

  • pure vanilla extract1⁄4 teaspoon

    (NOT imitation) or 1/2 teaspoon vanilla powder

  • salt1⁄4 teaspoon
  • ground cinnamon3⁄4 teaspoon
  • ground allspice1⁄8 teaspoon
  • freshly grated nutmeg1 pinch
  • ground cardamom1 pinch
  • ground star anise1 pinch

Step-by-step instructions

    Preheat a baking sheet in the oven at 350 degrees.

    In a bowl combine all the ingredients and toss to coat.

    Spread the nuts singly on a baking sheet and bake for about 20 minutes, or until the pecans are browned and crispy. Stir nuts occasionally to avoid burning and to roast evenly. *Watch* oven carefully!

    Set baking sheet aside to allow nuts to cool completely. Once cooled, transfer to airtight container.
