Received this intriguing recipe from AJ on gourmet_recipes_from_around_the_world. I plan to make them when the wet weather clears so I can use the deep fat fryer on the daeck - oh, & have friends over to eat these! Think these will make an outstanding breakfast with strong coffee (& chai tea for the coffee hater) before a day of winter fishing! Thanks AJ! You will need oil for frying that has a high smoke point - we always use pure peanut oil.

Ingredients

  • eggs, beaten2
  • granulated sugar3⁄4 cup
  • butter, melted1 tablespoon
  • all-purpose flour2 1⁄2 cups
  • baking powder2 1⁄2 teaspoons
  • salt1⁄2 teaspoon
  • ground nutmeg1⁄4 teaspoon
  • dates, chopped1 cup
  • milk1 cup
  • lemon extract1 teaspoon

Step-by-step instructions

  1. 1

In a bowl, combine beaten eggs, sugar and melted butter; beat well. In another bowl, combine flour with baking powder, salt and nutmeg. Fold in dates. Add dry ingredients to egg mixture alternately with milk and lemon extract.

  2. 2

Heat oil in deep-fat fryer to 375°F Drop batter by tablespoonfuls, 2 or 3 at a time, into hot oil and fry until crisp and brown, about 3 minutes frying time, turning once. Drain on paper towels.
