An easy recipe that you can make up to suit your tastes. Adapted from a long-forgotten magazine.

Ingredients

6 serv.
  • unsliced French bread16 ounces
  • lean ground beef1 lb
  • tomato paste1
  • sliced green onion1⁄4 cup
  • chopped pitted ripe olives1⁄4 cup
  • water1⁄4 cup
  • salt1⁄2 teaspoon
  • oregano1⁄2 teaspoon
  • ground black pepper1⁄8 teaspoon
  • grated parmesan cheese1⁄3 cup
  • medium tomatoes2

    sliced

  • medium green sweet pepper1

    sliced into rings

  • shredded pizza cheese1 cup

    blend

Step-by-step instructions

    Preheat broiler.

  2. 2

    Cut the French bread in half horizontally and place halves, cut side up, on a broiler pan. Broil 4 inches from heat for about 1-2 minutes or until the bread is lightly toasted. Transfer bread to cookie sheets and set aside.

    Turn off broiler and set oven temperature to 350º.

    In a large skillet, brown ground beef until thoroughly cooked. Drain off fat.

    Stir in tomato paste, green onion, olives, water, salt, oregano, and black pepper.

    Cook over medium heat until heated through. Remove from heat and stir in Parmesan cheese.

    Top bread halves evenly with the meat mixture.

    Top with the tomato slices, green pepper slices and pizza cheese.

    Bake for 8-10 minutes or until cheese is melted.
