Ingredients

  • butter-flavored cooking spray1 teaspoon
  • old fashioned oats2 cups
  • white whole wheat flour1 1⁄2 cups
  • baking soda1 teaspoon
  • ground cinnamon1⁄2 teaspoon
  • ground nutmeg1⁄2 teaspoon
  • salt1⁄2 teaspoon
  • raisins, seedless2⁄3 cup
  • egg1

  • canola oil3 tablespoons
  • unsweetened applesauce3⁄4 cup
  • vanilla extract1 1⁄2 teaspoons
  • brown sugar1⁄3 cup
  • Splenda sugar substitute1⁄3 cup

Step-by-step instructions

    Preheat oven to 350 degrees F. Lightly spray a cookie sheet with cooking spray.

    In a large bowl, combine flour, baking soda, oats, cinnamon, salt, and nutmeg. Toss with raisins.

    In a medium bowl, cream together egg, applesauce, canola oil, vanilla, and the sugars. Whisk to blend thoroughly.

    Fold egg-sugar mixture into flour-oat mixture, 1/3 at a time, mixing well.

    Drop by the tablespoonful onto prepared cookie sheet, about 2 inches apart.
