Leftover Turkey and Mashed Potato Patties

My mom usually bought a whole bird for Thanksgiving dinner but no one but Grandma would eat anything other than the breast resulting in a lot of leftover dark turkey meat. If your family is the same way this is a great way to get rid of that left over turkey. You can use chicken and fish instead of turkey.

Ingredients

4 serv.
  • mashed potatoes2 cups
  • turkey1 lb

    shredded

  • garlic cloves3

    minced

  • onion3⁄4 cup

    minced

  • egg1

    beaten

  • parsley1 tablespoon
  • turmeric1 teaspoon
  • cayenne1⁄4 teaspoon
  • flour1⁄4 cup

    you may need more

  • oil

Step-by-step instructions

    Mix everything together until well blended.

    Add enough flour so that the mixture isn't too sticky.

    Shape into patties and fry until golden brown about 3-5 minutes on each side.
