Use stale baguette or sourdough instead of sliced white bread to make this creamy bread sauce. It’s perfect as a side for Christmas or a Sunday lunch.
Simmer milk, butter, onion, cloves, star anise and herbs in a pot for 20 minutes. It can be prepared a day ahead and left to infuse in the fridge. Strain the mixture and return the liquid to the pot. Return to heat and add the bread crumbs.
Simmer and stir for 3‑4 minutes until the sauce thickens. Add the condensed cream and nutmeg, season generously and serve. It can be made up to three days ahead; reheat on the stove or in the microwave on medium power for three minutes.
