Prepare these impressive mini beef Wellingtons – made with steak fillet, Parma ham and mushroom pâté, wrapped in puff pastry – in your air fryer.
Preheat the air fryer to the highest temperature. Brush the steaks with oil and season with salt. Cook for 4 minutes, then remove and let cool completely. Meanwhile, take the pastry out of the fridge and let it sit at room temperature for 10 minutes.
Place two slices of Parma ham in a cross shape and lay the beef fillet in the center. Repeat with the remaining ham and fillet. Spoon the pâté on top (round it slightly to form a dome if possible), then wrap the ham around, forming two parcels.
Unfold the puff pastry and cut it in half. Place the wrapped fillets at the end of each pastry rectangle, then brush the surrounding pastry with a little water. Fold the pastry and gently press around the beef with your hands, trying not to leave air pockets. Trim the excess pastry with a small knife (leave as a rectangle or shape into an oval), then secure the edges with a fork.
Preheat the air fryer to 180 °C. Brush the parcels with beaten egg and cook for 15 minutes for medium doneness or 20 minutes for well done. Let them rest for a few minutes before serving.
