Prepare these light biscotti to serve with coffee, or dip in chocolate and pack in a jar as a Christmas gift for family and friends.
Preheat the oven to 180°C/160°C with convection/gas 4 and line a baking tray with parchment paper. Place the flour, sugars, leavening agent and a generous pinch of salt into a large bowl and mix.
In a separate bowl whisk together the oil, egg, vanilla and 3 tbsp hot water. Gradually add the wet ingredients to the dry ones until the mixture forms a dough. Gently knead the dough until smooth – it will be quite dry, so add another 1 tbsp water if after a few minutes it is hard to knead. Divide the dough into two equal parts, shaping each into a log measuring 25 × 8 cm. Place the logs on the prepared tray and bake for 25‑30 minutes. Remove from the oven and let cool on the tray for about 15 minutes.
Using a sharp knife cut the slightly cooled logs into slices 1‑2 cm thick crosswise. Return the biscotti to the parchment‑lined tray and bake for another 15‑20 minutes (the oven temperature should remain 180°C/160°C with convection/gas 4), turning the tray halfway through. Let them cool a bit on the tray, then transfer the biscotti to a wire rack and allow them to cool completely. If desired, dip one end of each biscotti into melted chocolate, then let it set on a parchment‑lined tray. Store in an airtight container for up to five days.
