Curtido is a low‑fat Mexican salad made from white cabbage, carrots and onion. Spoon it generously onto tacos or into a burrito, or serve it as a separate salad.

Ingredients

4 serv.
  • small white cabbage1

    about 680 g, finely shredded

  • red onion1

    thinly sliced

  • carrot2

    thinly sliced lengthwise

  • apple cider vinegar50ml ml
  • golden sugar2 tsp tsp
  • coriander½ small pack ½ small pack

    only leaves, roughly chopped

Step-by-step instructions

    Combine the cabbage, onion and carrot in a heat‑proof bowl. Heat the vinegar, sugar and 1 tsp salt in a pan over low heat until dissolved, then pour the mixture over the vegetables and mix well.

    Place the salad in the refrigerator for at least 30 minutes or until serving. A few minutes before serving, add the coriander leaves and season to taste.
