A quick mid‑week dish cooked in one pot with cod fillets, chickpeas, ginger and spices — it’s healthy, low‑calorie and iron‑rich.

Ingredients

4 serv.
  • oil1 tbsp tbsp
  • onion1

    chopped

  • curry powder2 tbsp tbsp
  • ginger

    peeled and finely grated

  • garlic cloves3

    minced

  • diced tomatoes2 x 400g cans
  • canned chickpeas400g g
  • cod4

    fillet (about 125-150g each)

  • lemonzest 1

    zest, then cut into wedges

  • coriander

    roughly chopped

Step-by-step instructions

    Heat the oil in a large covered skillet. Sauté the onion over high heat for a few minutes, then add the curry powder, ginger and garlic. Cook for another 1‑2 minutes until fragrant, then add the tomatoes, chickpeas and a little seasoning.

    Cook for 8‑10 minutes until the sauce thickens slightly, then place the cod on top. Cover and cook another 5‑10 minutes until the fish is done. Sprinkle with lemon zest and coriander, and serve with lemon wedges for squeezing.
