Curried Beef, Katmandu Style (Nepal)

Ingredients

6 serv.
  • beef stew meat4 lbs
  • flour1⁄4 cup
  • oil1⁄4 cup
  • onions2

    large, peeled and sliced

  • tart apple1

    medium, pared, cored, chopped

  • dry mustard3⁄4 teaspoon
  • powdered ginger1⁄4 teaspoon
  • curry powder2 tablespoons
  • brown sugar1 tablespoon
  • beef bouillon3 cups
  • tomato puree2 tablespoons

    or 2 tablespoons condensed tomato soup

  • pepper1 teaspoon
  • nuts1⁄2 cup

    crushed, for garnish

  • coconut1⁄2 cup

    for garnish

  • raisins1⁄2 cup

    for garnish

Step-by-step instructions

    Remove all fat from the meat.

  2. 2

    Dredge meat with flour.

  3. 3

    Heat oil in large frying pan which is deep or use a Dutch oven.

    Saute onions and garlic in oil until the onions are transparent.

    Add meat, apple, seasonings, bouillon, tomato puree.

    Cover and let simmer 1-2 hours, or until meat is tender; if necessary add more bouillon stock.

    Skim off excess fat.

  8. 8

    Serve over rice with crushed nuts, coconut and raisins on the side.
