This healthy homemade granola is high in fiber and packed with beneficial ingredients such as dried apricots, nuts, and seeds. Serve with fresh peaches and yogurt.

Ingredients

  • soft dried apricots (about 7)50g g

    (we used organic Crazy Jack because they are sulfur‑free)

  • rapeseed oil½ tbsp tbsp
  • large eggs3

    only whites (see tip for using yolks)

  • rolled oats200g g
  • cinnamon1 tbsp tbsp
  • vanilla extract1 tbsp tbsp
  • dried coconut25g g
  • sliced almonds25g g
  • pumpkin seeds25g g
  • bio yogurt3 x 120g pots pots
  • peaches3

Step-by-step instructions

    Preheat the oven to 180°C/160°C fan/gas mark 4 and line a large baking tray with parchment paper.

    Place the apricots, oil and egg whites in a bowl (see tip for using yolks), then blend with an immersion blender until very smooth. Add the oats, cinnamon and vanilla, then gently fold in the dried coconut, sliced almonds and pumpkin seeds.

    Form small clusters of the mixture, then spread them evenly on the prepared tray in a single layer. Bake for 15 minutes, then stir (turning the larger pieces) and bake another 10 minutes until golden and crisp.

    Allow the granola to cool completely on the tray, then transfer to a large airtight jar or container. If you follow our Healthy Eating Plan, serve two portions over three days, filling the base of each bowl with yogurt (½ jar per portion) and topping with half a sliced peach.
