Enhance a bread sauce by adding creamy, crispy onion. It’s an ideal sauce for a Christmas table or to serve with your Sunday baked dish.
Heat a dry saucepan until hot and cook the onion for a few minutes, stirring occasionally, until it begins to brown, then add the butter. Fry for 5 minutes until the onion is soft and the butter is light brown. Pour in the milk, then add the bay leaf and ground cloves. Season. Bring to a boil, then gently simmer for 5 minutes.
Turn off the heat, remove the bay leaf and add the bread and cream, stirring. Transfer to a blender or use an immersion blender to obtain a thick sauce. Return to the saucepan and heat, stirring, until it boils and thickens. It can be prepared two days ahead, cooled, stored in the refrigerator and reheated, adding a little more milk. Serve the sauce in a bowl, sprinkled with onion seeds and crispy onion, if using.
