Treat your guests to a festive cranberry gin fizz at the next Christmas party. You can easily make a non‑alcoholic version by swapping gin for a non‑alcoholic alternative.
Pour the sugar and 150 ml of water into a saucepan over low heat and warm until the sugar fully dissolves. Increase the heat to medium‑low and add the cranberries. Cook, stirring occasionally, for 15 minutes or until the cranberries begin to break down. Let cool, then blend to a smooth purée with an immersion blender if desired (you can leave it as is). Store in a sterilised sealed jar in the fridge for up to a week.
For serving, place 1 tbsp of cranberry purée into each glass, add a measure of gin and top up with sparkling water. Garnish each glass with an orange slice and add a few ice cubes. Or mix everything in a pitcher and serve.
