Clementine and Vanilla Oat Porridge with Citrus Salsa

Brighten your morning with these nutritious oat cups topped with fresh citrus fruits. They are also a good source of vitamin C, calcium, and folic acid.

Ingredients

  • clementines4
  • vanilla extract2 tsp tsp

  • grapefruit1

    peeled, seedless and sliced

  • mint leavessmall handful

  • sunflower seeds2 tbsp tbsp
  • walnut halves6

  • bio yogurt4 x 120g pots

Step-by-step instructions

    Peel the clementines, then finely chop 1 tbsp of zest. Place the zest in a large bowl together with the vanilla extract, oats and 800 ml of water. Cover and let steep overnight.

    To make the salsa, chop the clementines and mix in a bowl with the grapefruit and mint leaves. Cover and chill.

    The next morning pour the porridge into a saucepan and cook until it boils and thickens.

    If you are using our Healthy Eating Plan, divide half of the porridge into two bowls and transfer the rest into a container ready for cooling, then add half of the salsa, sunflower seeds and walnut halves. Distribute the remaining salsa between the two porridge bowls together with half of the bio yogurt. Sprinkle with the remaining nuts and seeds. The leftover porridge can be reheated the next day with a splash of water. Top with the remaining salsa and yogurt.
