Marinated hot peppers, spicy chorizo and sweet cherry tomatoes create this simple and quick pasta dish. Perfect for a light mid‑week lunch for two.
Bring a large pot of salted water to a boil. Add the pasta, stir well, then cook for 1 minute less than the time indicated on the package, about 9‑10 minutes.
Heat the oil in a pan over high heat. Add the chorizo and cook for a few minutes until the fat renders, then add the tomatoes, a pinch of sugar and some seasoning. Simmer for 5 minutes, then drain the pasta, toss it with the sauce and add the pepper and basil. Serve with a generous sprinkling of grated Parmesan.
