Smacked Chiu Chow Cucumber

Enjoy this spicy smashed cucumber with steak, or as a snack. "Smashed" cucumber lets the marinade penetrate the flesh.

Ingredients

4 serv.
  • cucumber1
  • garlic clove1

    finely chopped

  • sugar2 tsp tsp
  • light soy sauce1 tbsp tbsp
  • rice vinegar2 tsp tsp
  • chili oil1-2 tsp tsp

    plus extra for serving (optional)

Step-by-step instructions

    Place the cucumber on a cutting board and gently crush it lengthwise using a rolling pin or by pressing the flat side of a knife with your fist – you want to slightly break the flesh, but not turn it into puree. Cut the cucumber in half and remove the seeds, then slice the flesh into bite‑size pieces. Sprinkle about ½ tsp sea salt (you can do this on the board), let it sit for 10 minutes, then rinse well with cold water and drain.

    Combine the garlic, sugar, light soy sauce and rice vinegar with the chili oil in a serving bowl. Add the cucumber and let it marinate for 10 minutes. Serve with extra chili oil on the side, if desired, for those who like more heat.
