Chili beans and guacamole on chips

Make these simple chili beans and chips for a Friday night dinner after a long week. Sour cream would be a great addition if you have it

Ingredients

  • frozen potato sticks450g g
  • Cajun seasoning1 tbsp plus 1 tsp
  • canned beans400g can g
  • garlic clove1

    grated

  • cheddar60g g

    grated

  • red onion1

    thinly sliced

  • lime½

    juice

  • sugar½ tsp tsp
  • avocado1

    peeled, pitted, halved and diced

  • lime1

    zest and juice

  • chili flakes½ tsp tsp

    optional for serving

    thinly sliced, plus a few leaves for garnish

Step-by-step instructions

    Preheat the air fryer to 180 °C. Prepare the potato sticks according to the package instructions, then toss them with 1 tbsp Cajun seasoning and a generous pinch of salt. Set aside.

    Make the pickled onion by finely chopping the red onion and mixing it with lime juice and sugar in a small non‑metallic bowl. Season with a small pinch of salt and refrigerate to marinate slightly.

    Place all the guacamole ingredients in a medium bowl. Lightly mash them with a fork and season. Set aside. Transfer the canned beans to a small saucepan, add 1 tsp Cajun seasoning, garlic and a pinch of black pepper. Cook 3‑4 minutes, stirring frequently, until heated through.

    Line the air fryer basket with foil so it rises on the sides (this makes it easier to remove the potatoes later). Spread the potatoes on the foil, then add the beans and cheese. Cook 3‑4 minutes until the cheese melts and turns golden. Carefully transfer to a large serving plate.

    Spoon some guacamole onto the plate and serve the rest separately, together with the pickled onion. Sprinkle extra coriander and chili flakes if desired.
