These nutritious bars are a great post‑workout snack. They are gluten‑free and easy to make without baking.
Line the bottom of a 20 × 20 cm pan with parchment paper. Place the seeds in a dry non‑stick skillet over medium heat and cook until they start to pop and turn golden. Transfer to a small bowl to cool.
In a medium saucepan melt the nut butter and honey over low heat for about 2 minutes, stirring constantly until the mixture is warmed.
Remove the pan from the heat. Add the cinnamon and cocoa powder, then the fruit and toasted seeds. Stir in the sprinkled rice and mix well to coat. Quickly pour the mixture into the pan, spread evenly and press with the back of a spoon to create a firm, flat surface.
Let set for 45 minutes to 1 hour until firm, then cut into 8 bars with a sharp knife. Wrap each bar in parchment strips and secure with tape or string. Store in an airtight container for 3–4 days.
