Skip the coffee shop and make our homemade chai latte. Use pantry spices like cinnamon and cardamom to recreate this Indian tea.
Toast the spices in a dry pan until fragrant, then place them, the ginger and tea bags into a kettle or coffee maker with 500 ml of freshly boiled water and let steep for 10 minutes.
Heat the milk with brown sugar, stirring until the sugar dissolves. When the milk begins to steam lightly, whisk the top with a milk frother or whisk to create foam.
Strain the tea into 4 cups or heat‑proof glasses, then pour the milk, keeping the foam separate. Stir. For each latte add a little milk foam, then sprinkle with a pinch of cinnamon.
