  • buttermilk284ml tub ml
  • polenta100g g
  • cornstarch100g g
  • mustard powder1 tsp tsp
  • mayonnaise4 tbsp tbsp
  • hot sauce1 tbsp tbsp
  • paprika2 tbsp tbsp
  • garlic powder4 tsp tsp
  • cayenne pepper4 tsp tsp
  • ground black pepper2 tsp tsp
  • onion powder2 tsp tsp
  • dried thyme1 tsp tsp
  • dried oregano1 tsp tsp

Step-by-step instructions

    Mix all the ingredients for the mayonnaise, adding lime juice to taste. Set aside.

    Coat the shrimp in ½ tbsp of Cajun seasoning. Pour the buttermilk into a bowl and stir well to thin it slightly. In another bowl, combine the polenta, corn starch, mustard powder and the remaining Cajun seasoning.

    Fill a deep pan with oil to a depth of about 2 inches. Heat to 180 °C using a kitchen thermometer, or until a piece of bread browns after 20 seconds of immersion. Quickly dip each seasoned shrimp into the buttermilk, then coat in the flour mixture. Fry the shrimp 1–2 minutes per side until golden‑brown and curled. Drain excess oil on paper towels, then serve with the mayonnaise and lime wedges for squeezing.
