Pumpkin and Cinnamon Oatmeal

Prepare a healthy, low-fat, filling breakfast with eastern sweet notes of pumpkin pie. It's a great way to start the day.

Ingredients

  • oats120g g
  • raisins80g g
  • ground cinnamon2 tsp tsp

    plus a pinch for serving

  • large piece of pumpkin

    peeled and coarsely grated (about 320 g grated mass)

  • bio yogurt2 x 150ml pots
  • walnuts25g g

    coarsely chopped

  • milk

    for serving (optional)

Step-by-step instructions

    Transfer the oats, raisins, and cinnamon into a large bowl and pour in 1 liter of cold water. Cover the bowl with a lid and let it soak overnight.

    The next morning, pour the contents into a large saucepan and add the grated pumpkin. Cook for about 8‑10 minutes over medium heat, stirring frequently, until the oatmeal is done and the pumpkin is soft. If the mixture is too thick, add a little water.

    Place half of the mixture in the refrigerator for the next day. Spread the rest onto plates, top each serving with one pot of yogurt and half the nuts. Sprinkle with cinnamon, then serve with a splash of milk.
