Brown butter and bay leaf sauce with bread crumbs

Prepare a classic bread sauce for the Christmas table. Use bread crumbs for texture, or crush them if you prefer a smooth consistency.

Ingredients

  • salted butter80g g
  • fresh bay leaves2

    plus 1 extra for serving

  • onion1

    finely chopped

  • garlic cloves2

    finely chopped

  • whole milk450nl ml
  • nutmeg½

    grated

  • cloves3
  • black pepper½ tsp tsp
  • fresh white bread crumbs80g g
  • rich cream2 tbsp tbsp

Step-by-step instructions

    Melt 50 g butter in a medium saucepan over medium heat, then when foam appears, add the bay leaves, onion and garlic. Cook for 10‑12 minutes, stirring constantly, until the onion and garlic become soft. Add the milk and spices.

    When the mixture is heated, gradually add the bread crumbs, stirring well. Simmer uncovered for 5‑6 minutes, stirring frequently. If using, add the cream. Season with salt and pepper. It can be frozen for up to one month. First let it cool. Reheat over low heat, stirring constantly.

    When serving, melt the remaining 30 g butter in a small pan over medium heat. Cook until the butter turns brown and develops a nutty aroma, whisking to collect all the golden milk solids. Pour this over the sauce, optionally add more pepper and garnish with a bay leaf.
