This recipe combination was created by Dalton Babb and appears in "Cooking the Caribbean Way". I have used this combination for "theme" dinners and my guests really enjoyed the concept. Suggested wine - Sauvignon Blanc

Ingredients

4 serv.
  • BRIDGETOWN POTATOES
  • potatoes3 lb
  • onion1

    finely chopped

  • butter1⁄2 cup
  • poultry seasoning1⁄2 teaspoon
  • salt and pepper
  • WEST INDIAN STYLE SHRIMP SCAMPI
  • fresh shrimp3 lb
  • fresh lemon1⁄2
  • black pepper1⁄2 teaspoon
  • garlic powder1⁄4 teaspoon
  • Tabasco sauce1⁄2 teaspoon
  • poultry seasoning1⁄2 teaspoon
  • thyme1⁄2 teaspoon
  • curry powder1⁄2 teaspoon
  • cup butter1
  • flour

Step-by-step instructions

    BIDGETOWN POTATOES.

    Boil potatoes with skin on.

  3. 3

    After potatoes are cooked and cool enough to handle, peel and dice.

  4. 4

    Melt butter in heavy skillet.

  5. 5

    Add potatoes, onion, poultry seasoning, salt and pepper to taste.

    Saute over very low flame until brown.

  7. 7

    Serve with Shrimp Scampi.

    SHRIMP SCAMPI.

    Cook the shrimp in boiling water with lemon half.

  10. 10

    After the shrimp is cooked and cool enough to handle, shell and devein.

    Mix together the pepper, garlic powder, Tobasco sauce, poultry seasoning, thyme and curry powder.

    Marinate the shrimp in this mixture for approximately 35 minutes.

    Melt the butter in a heavy skillet.

  14. 14

    Dip the shrimp in flour and fry until golden brown.

  15. 15

    Serve with Bridgetown potatoes.
