Eggs Benedict in Bloody Mary style with smoked salmon

Add a kick to your favourite breakfast with a splash of Tabasco and Worcestershire sauce, a perfect hangover cure after a big night of celebrations.

Ingredients

2 serv.
  • eggs4
  • milk2 tbsp tbsp
  • Tabasco½ tsp tsp

    additional for serving (optional)

  • Worcestershire sauce½ tsp tsp

    additional for serving (optional)

  • olive oil1 tbsp tbsp
  • cherry tomatoes100g g
  • finely chopped chives1 tbsp tbsp
  • smoked salmon100g g

    sliced

  • wholegrain bread4 slices slices

    toasted and buttered

  • lemon½

    cut into wedges

Step-by-step instructions

    Whisk the eggs, milk, Tabasco, Worcestershire sauce and a pinch of seasoning in a jug. Heat the oil in a large non‑stick pan over low heat and pour in the egg mixture. Cook, stirring, until it sets around the edges while remaining slightly runny in the centre. Then add the cherry tomatoes and warm for 1 minute until the eggs finish cooking.

    Top the toasted bread with the scrambled eggs and finely chopped chives, and arrange the smoked salmon beside it with a lemon wedge for squeezing. Drizzle extra Tabasco and Worcestershire sauce if you want more heat.
