Blackberry and White Chocolate Topping for Oatmeal

A tasty topping made with blackberries, seed mix and white chocolate that will brighten oatmeal at breakfast.

Ingredients

  • blackberries300g g
  • lemon1

    juiced

  • fine sugar100g g
  • white chocolate100g g

    coarsely chopped

  • seed mix4 tbsp tbsp
  • oat flakes200g g
  • milk400ml ml

Step-by-step instructions

    Transfer the blackberries, lemon juice, sugar and 1 tbsp water to a saucepan. Bring to a gentle boil over medium heat. Cook 5‑6 minutes until the berries soften and start to break down, then remove from heat. Set aside. After cooling, store in a sealed container in the fridge for up to five days.

    Meanwhile, prepare the oatmeal. Transfer the oat flakes, milk and 800 ml water to a saucepan, add a pinch of salt. Cook, stirring frequently, over medium heat for 8‑10 minutes until the porridge thickens and becomes creamy – cook a little longer for a thicker porridge, or add a splash of water if you prefer it thinner. The more you stir, the creamier it gets. Add the white chocolate and stir until fully melted.

    Divide the oatmeal into bowls, fold in the blackberry mixture, then sprinkle with the seed mix.
