These fragrant beans in a barbecue sauce with bacon make a perfect spicy side dish that will enhance any dinner, especially baked potatoes in the skin.
Heat the olive oil in a large skillet. Thinly slice the celery stalks, finely chop the onion and red pepper, and sauté over medium heat until softened, about 10 minutes. Transfer the vegetables to a bowl, and in the same skillet fry the bacon until golden and crisp. Add the minced garlic and soft chili powder, cook for another minute.
Stir in the tomato paste, maple syrup, Worcestershire sauce and the prepared vegetables, mixing thoroughly.
Rinse and drain the canned borlotti and cannellini beans. Add them to the skillet, bring to a boil, then reduce the heat and simmer for 10 minutes. Season to taste and serve with baked potatoes in the skin.
