Ingredients

4 serv.
  • extra virgin olive oil3 ст. л.
  • small whole mackerels

    gutted and cleaned

  • large red chili1

    seedless, finely chopped

  • small garlic clove1

    finely chopped

  • fresh ginger rootневелика кулька

    finely chopped

  • honey2 ч. л.
  • limes2

    zest and juice

  • sesame oil1 ч. л.
  • Thai fish sauce1 ч. л.

Step-by-step instructions

    Heat the grill until the charcoal turns white and stops sparking. In a small bowl whisk together 2 tbsp olive oil, honey, lime juice and zest, finely chopped chili, garlic, ginger, sesame oil, and Thai fish sauce. Season to taste.

    Make six side cuts on each mackerel, avoiding cutting through the bone. Brush the fish with the remaining oil and lightly sprinkle with salt. Grill for 5–6 minutes per side until the skin is browned and the flesh becomes opaque. Drizzle the cooked fish with the prepared sauce and let rest for 2–3 minutes before serving.
