One‑Pan Sausage and Bean Bake

Ingredients

  • vegetable oil1 ст. л. tbsp
  • quality sausages (packet)454 г g

    cut each sausage into three pieces

  • small onion1

    sliced

  • carrot3

    cut into thick slices

  • celery4

    stalks, washed (if needed – brush off dust), cut into large pieces (leaves finely chopped if present)

  • canned bean mix2 шт. pcs

    (or other beans), drained and rinsed under cold water

  • hot chicken or vegetable broth400 мл ml
  • Dijon mustard1–2 ст. л. tbsp

    (or 2 tsp ready English mustard), depending on how spicy you want the dish

  • fresh parsleyжменя

    chopped

  • crusty bread

    for serving

Step-by-step instructions

    Brown the sausages. Heat the oil over high heat in a wide, shallow skillet with a lid. Add the sliced sausages and fry for 5 minutes, stirring occasionally, until browned on all sides.

    Prepare the vegetables and beans. Add the onion, carrot, and celery stalks (finely chop the leaves) to the pan and cook for 5 minutes until the onion becomes translucent. Add the beans, stir well, pour in the broth and bring to a boil, stirring constantly. Cover and simmer for 10–15 minutes until the carrot is tender.

    Finish the dish. Stir in the mustard, parsley, and chopped celery leaves, and season with salt and pepper to taste. (The sausage‑bean mixture can be frozen—whole or in portions—for up to two months.) Serve hot with slices of crusty bread to soak up the sauce.
