These baked tortellini with tomato sauce and sausage are quite simple yet incredibly tasty. It's my favorite comfort food right now. Highly recommend dunking them in aromatic garlic bread with butter!
Brown the sausage: Heat a very large oven‑safe skillet over medium‑high heat. Add the oil and sausage; break it up with a wooden spoon and brown until it develops a good color. Transfer to a bowl and pour off excess oil (I usually discard about one tablespoon, leaving one tablespoon in the skillet).
Sauté the vegetables: If there is browned residue at the bottom of the pan, great. Add the vegetables, allowing them to pick up some of that flavorful browned taste. Add the fennel seed. Cook until the vegetables are fragrant and tender – you may add a pinch of salt or more oil if desired. Then return the sausage to the skillet.
Add the rest: Add the tomato sauce, tortellini, and 1 cup of broth. The skillet will be full. Bring to a gentle boil and cook for about 5 minutes until the tortellini are cooked through. If more liquid is needed, add the remaining broth. Sometimes I simply cover and let it sit on low heat.
Spinach and cheese: Taste and adjust – if you used canned tomatoes instead of sauce, you may need a bit of salt. Add the spinach and stir until wilted. Sprinkle everything with shredded mozzarella and place in the oven at 375 °F (190 °C) for 8‑10 minutes until the cheese melts.
Finish: Sprinkle with grated Parmesan and finely chopped parsley, and serve this delight together with pieces of garlic bread. SO TASTY.
