e.g., arugula, basil, frisée or small red kale, dressed with vinaigrette
Preheat the oven to 200 °C (convection 180 °C, gas 6). In a large bowl combine mascarpone, grated Parmesan, finely chopped basil and the zest of half a lemon, seasoning to taste.
Unfold the puff pastry and cut it into two sheets. On the edges of each sheet make slits, leaving a thin border. Spread the cheese mixture onto the center of each sheet, distributing it evenly.
Sauté the asparagus in a dry skillet with olive oil for 2‑3 minutes until it turns bright green. Arrange the stalks on the puff pastry, lifting them slightly to create a few layers.
Bake the pastries for 20‑25 minutes until the pastry turns golden. Serve them warm, garnished with salad leaves dressed with vinaigrette and extra shavings of Parmesan.
