A light spring appetizer that will be the star of any party – just pick your favourite sauce and dip the asparagus.

To make the butter‑parmesan sauce, melt the butter in a small saucepan over very low heat, adding the lemon juice. Stir gradually until the mixture becomes homogeneous, then add the grated parmesan, season to taste and remove from heat.
For the Asian dressing, crush the red chili with brown sugar in a mortar, then stir in the lime juice until the sugar dissolves. Add soy sauce and sesame oil, mix and set aside.
For the garlic mayonnaise, combine the minced garlic cloves, mayonnaise, olive oil and a pinch of salt, mix well. Transfer the ready sauces into three separate containers.
In a large pot bring water to a boil, immerse the asparagus and cook for 2–3 minutes until tender yet still crisp. Drain, quickly cool the asparagus in ice water, then place on a serving plate so everyone can choose a sauce and dip.
