Ingredients

  • olive oil1 tbsp
  • onion1

    finely chopped

  • boneless lean lamb, cubed500 g

    preferably from the leg

  • sweet potato300 g

    cut into small pieces

  • ground coriander2 tsp
  • ground cinnamon2 tsp
  • tomato purée1 tbsp
  • pitted dates50 g
  • coriander2 tbsp

    coarsely chopped

Step-by-step instructions

    Heat the olive oil in a large skillet, add the finely chopped onion and cubed lamb, and sauté until the meat is browned.

    Add the diced sweet potato, ground coriander, and ground cinnamon, and stir thoroughly.

    Pour in 425 ml of hot water, add the tomato purée, bring to a boil, then reduce the heat.

    Cover and simmer for 15 minutes until the sweet potato and lamb become tender.

    During the last 10 minutes, add the chopped dates, stir and continue simmering.

    Before serving, sprinkle the dish with fresh coarsely chopped coriander and serve with couscous.
