A fragrant, juicy and slightly spiced apricot‑hazelnut Christmas stuffing that will be the star of the festive table, complement turkey and can also serve as a side dish.
In a dry skillet, sauté the chopped onion in butter until translucent. Add the coarsely chopped hazelnuts and fry until the nuts turn golden. Remove the pan from heat, add the chopped apricots, breadcrumbs, parsley and lemon zest, and stir. Stir in the beaten egg, season to taste and mix thoroughly. Set aside half of the mixture to stuff the turkey neck, and shape the rest into small balls.
Place the balls in a butter‑greased baking dish, drizzle with olive oil. Bake in a preheated oven for 30 minutes until they develop a golden crust, or pan‑fry them around the turkey.
