Apple Walnut Marmalade

A fragrant, delicate and versatile marmalade that’s perfect on toast, pancakes or simply on bread – an autumn delight in every spoonful.

Ingredients

  • dessert apple450g g
  • butter50g g
  • light muscovado sugar85g g
  • lemon1 маленький

    zest, juice and squeezed halves

  • bay leaf1
  • brandy1 ст. л. tbsp

    (optional)

  • walnut100g g

    coarsely chopped

Step-by-step instructions

    Cut the apples into quarters, remove the core (leave the skin on), then cut each quarter in half again.

    In a large skillet melt the butter, add the apples, sugar, lemon zest and juice, the squeezed lemon halves, and the bay leaf. Stir gently, cover and simmer over low heat for about 10 minutes until the apples are soft.

    Remove the lid, increase the heat to medium‑high and cook uncovered for another 5 minutes until excess liquid evaporates, leaving a juicy syrup‑like consistency.

    Remove the lemon halves and bay leaf, add the brandy (if using) and let cool slightly.

    Stir in the coarsely chopped walnuts, mix quickly and serve the marmalade warm.
