  • dark soft brown sugar50g g
  • black treacle1 ст. л. tbsp
  • soft full‑fat cheese (tube)200g g

Step-by-step instructions

  1. 1

Preheat the oven to 150 °C (130 °C with fan) or gas mark 2. Line two 20 cm diameter cake tins with baking paper. In a large bowl whisk together the flour, cinnamon and baking soda, then add both sugars and mix thoroughly to eliminate lumps. Add the oil, eggs and grated apples and beat until smooth. Gently fold in the coarsely chopped walnuts, divide the batter between the tins and bake for 45 minutes until a skewer inserted in the centre comes out clean. Allow the cakes to cool slightly in the tins, then remove and cool completely on a wire rack.

  2. 2

For the glaze, beat together the butter, sugar, treacle and soft cheese until smooth, then chill until it becomes thick yet spreadable. Spread half of the glaze over the top of the first layer, place the second layer on top and evenly spread the remaining glaze over the top.
