Amalfi-Style Prawns

A light summer appetizer inspired by the sea breeze of the Amalfi coast — perfect for a quick grill dinner.

Ingredients

  • extra virgin olive oil2 tbsp
  • garlic cloves2

    finely crushed

  • mint

    leaves, chopped

  • fresh peeled prawns450 g
  • dry breadcrumbs50 g
  • lemon

    wedges, for serving

Step-by-step instructions

    Soak about 20 wooden skewers in water for 20 minutes. In a medium bowl, pour 2 tbsp extra‑virgin olive oil, add 2 finely crushed garlic cloves, most of the mint leaves (reserve some for serving) and 450 g fresh peeled prawns. Season well, mix so that all ingredients are evenly coated, then chill and let marinate for 1 hour.

    Preheat the grill to medium heat. Thread 3–5 prawns onto each skewer. Prepare the dry breadcrumbs on a separate plate. Remove excess marinade from the prawns and coat them in the breadcrumbs on all sides.

    Arrange the skewers on a lightly oiled baking tray and place under the grill. Grill for 2 minutes on each side until the breadcrumbs are golden and the prawns are pink. Watch closely as they cook quickly. Sprinkle with the remaining mint and serve five per portion with lemon wedges.
