Pour the milk and add 50 g of butter into a small saucepan, heat over low heat until the butter melts (you can also do it in the microwave). Cool the mixture to room temperature.
Sift the flour into a large bowl, add the dry yeast, granulated sugar, spices and salt. Pour in the warm milk‑butter mixture and stir. Turn the dough onto a flour‑dusted surface and knead for 5 minutes until smooth and elastic; no more flour is needed.
Add the dried fruit and fold them thoroughly into the dough. Lightly oil the bowl, return the dough, cover and let rise in a warm, draft‑free place for 1 hour.
Grease a 20 × 20 cm pan and line it with parchment paper or a silicone liner for the air‑fryer basket.
Divide the dough in half and roll each piece into a square about 20 cm. Place one square in the pan, pressing the edges with your fingers. On a surface lightly dusted with powdered sugar, roll the marzipan to a size roughly equal to the dough and place it on the dough. Cover with the second dough square, press lightly without sealing, and let rise for another 1 hour until the dough has risen.
Preheat the air fryer to 160 °C. Bake the stollen for 25‑30 minutes until the top and bottom turn golden‑brown. Let it cool in the pan for 10 minutes, then remove and transfer to a rack.
Melt the remaining 15 g of butter and brush the stollen with it. Generously dust with powdered sugar, let it cool completely, then cut into squares.
