Step-by-step instructions

  1. 1

Soak the potato cubes in freshly boiled water for 30 minutes, drain and let them air‑dry for another 5 minutes. Preheat the air fryer to 200 °C. Transfer the potatoes to a bowl, drizzle with 1 tbsp olive oil, add ½ tsp salt and a pinch of freshly ground black pepper. Toss well to coat each cube evenly, then place in the fryer basket and cook for 20–30 minutes until crispy and golden.

  2. 2

While the potatoes are cooking, heat the remaining oil in a small pan over medium‑low heat. Sauté the finely chopped onion for 8–10 minutes until soft but not yet golden. Add the finely grated garlic and cook for another minute. Then add 1 tbsp smoked sweet paprika and sauté quickly for 30 seconds. Stir in 1 tbsp tomato paste and cook for 1 minute, then add the canned diced tomatoes. Simmer for 5–10 minutes over medium heat until the sauce thickens slightly.

  3. 3

When the potatoes are ready, place them on a plate, drizzle with the aromatic tomato sauce, sprinkle with fresh basil leaves and serve immediately.
