Ingredients

  • spicy chili paste (I like sambal oelek, but sriracha also works)2 tablespoon
  • soy sauce2 tablespoon
  • brown sugar2 tablespoon
  • an inch piece of ginger, peeled and finely grated1
  • garlic clove, finely grated1
  • pork (fillet) very thinly sliced (see notes)1.5 pound
  • vegetable oil2 tablespoon
  • raw rice1.5 cup
  • carrot, sliced into rounds2
  • cooked spinach3 cup
  • green onion, sliced2 tablespoon

Step-by-step instructions

    Shake all sauce ingredients in a jar. Pour the sauce over the pork and let it rest for 20 minutes to 1 hour.

    Heat a good skillet for sautéing (e.g., cast iron) over high heat. Add a little vegetable oil.

    When the oil is hot and shimmering, lay the pork in a single layer (you may need to do this in batches). Cook without stirring for 1–2 minutes until a nice caramelized crust forms. Flip and repeat to finish.
