30-minute healthy broccoli cheese rice

This 30‑minute healthy broccoli cheese rice is made from scratch – just a few simple ingredients for a creamy, broccoli‑packed dish!

Ingredients

  • uncooked brown rice (I used a Costco brown rice blend – I love it)1 cup
  • broccoli head, cut into florets1
  • butter3 tablespoon
  • minced garlic2 teaspoon
  • salt0.5 teaspoon
  • almond flour6 tablespoon
  • milk1 cup
  • shredded cheddar0.5 cup
  • broth as needed0.5 cup
  • canned white beans1

    rinsed and drained

  • chopped almonds for topping
  • chopped green onion for topping

Step-by-step instructions

    Cook the rice according to the package instructions. Bring enough water to a boil in a small pot to cover the broccoli. Add the broccoli, cook for 1 minute or until the broccoli turns bright green, and immediately remove from heat. Drain and transfer to a bowl of very cold water. This preserves the bright green color of the broccoli.

    In a deep pot melt the butter. Add the garlic and sauté until fragrant, about 1 minute. Add the almond flour and salt and cook for 2‑3 minutes (it will become thick and grainy). Gradually pour in the milk, whisking after each addition to create a smooth sauce, and let the mixture simmer a bit until it thickens. Add half of the cheese and stir until it melts.

    Finely chop the cooked broccoli into small pieces, leaving a few larger florets for texture. Mix the broccoli, cooked rice, white beans and, if needed, add more broth or milk until the mixture is homogeneous. Sprinkle the remaining cheese and cover the pot until the cheese melts. Garnish with almonds and green onion and season with additional salt and pepper.
