20-Minute Lemon Pesto Penne

These 20‑minute lemon pesto penne are my husband's favorite pasta! Young broccoli, oven‑roasted tomatoes, fresh lemon and basil.

Ingredients

4 serv.
  • whole grain penne8 ounce
  • young broccoli2 cup
  • roasted tomatoes1 cup

    brand Kirkland and rinsed excess oil

  • minced garlic1 teaspoon
  • pesto0.25 cup
  • feta0.25 cup
  • lemon juice0.5

    1/2

  • fresh basil

    sliced into strips

Step-by-step instructions

    Cook the penne according to the package instructions. Add the young broccoli to the pot of boiling water during the last 1‑2 minutes of cooking. It should turn bright green. Drain and return to the pan over medium‑high heat.

    Add the tomatoes and garlic to the pan with the pasta and young broccoli; sauté for 1‑2 minutes until fragrant. Add the pesto, half of the feta and the lemon juice. Stir in the pan until smooth. Remove from heat and add the basil. Sprinkle the remaining feta before serving.
