A wheat-free treat! This is almost like having the real thing. There is no wheat, sugar, dairy, or eggs used in this recipe.

  • Crust
  • vegan butter2 tablespoons
  • rice flour1 cup
  • stevia powder1⁄2 teaspoon
  • baking powder2 teaspoons
  • xanthan gum1⁄2 teaspoon
  • salt1⁄4 teaspoon
  • nutmeg1⁄4 teaspoon
  • Ener-G Egg Substitute, mixed in1 1⁄2 teaspoons
  • water2 tablespoons
  • rice milk1⁄3 cup
  • vanilla1⁄2 teaspoon
  • Filling
  • unsweetened sliced peaches3 cups
  • lemon juice2 teaspoons
  • teaspoon cinnamon1⁄2
  • teaspoon stevia powder1⁄4
  • teaspoon salt1⁄4
  • tablespoons vegan butter2

Step-by-step instructions

    Preheat oven to 350 degrees.

    Crust: combine rice flour, butter, stevia, baking powder, xantan gum, salt, and nutmeg in a medium sized bowl. In a small bowl, beat egg replacer, rice milk, and vanilla. Slowly mix wet ingredients into the dry. Set aside.

    Filling: In a medium sized bowl combine all ingredients except vegan butter plus 2 Tbs water(or juice if canned peaches were used). Place filling in a baking dish and dot with vegan butter.

    Spoon crust on top layer of peaches.

    Bake for 35 minutes or until crust is goldenish.
