Tuna Melt

These make a nice lunch, I have been making these for awhile now. Serve with a small salad and some fruit.

Ingredients

4 serv.
  • ounces solid white tuna packed in water, drained6 ounces
  • chopped celery1⁄3 cup
  • low-fat mayonnaise1⁄4 cup
  • dill pickle
  • ketchup
  • red onion1
  • whole wheat English muffins, split2
  • low-fat cheddar cheese, grated3 ounces
  • salt and black pepper

Step-by-step instructions

    Preheat broiler.

    Combine tuna, celery, onion and mayonnaise/pickles/ketchup dressing.

    Season with salt and pepper.

  4. 4

    Toast English muffin halves.

  5. 5

    Place split-side-up on baking sheet and top each with 1/4 of tuna mixture.

    Broil 2 to 3 minutes or until heated through.

  7. 7

    Top with cheese and return to broiler until cheese is melted, about 1 minute longer.
