Shredded Beef Sandwiches (Crock Pot)

Ingredients

6 serv.
  • boneless chuck roast↗2 1⁄2 lbs
  • tomatoes↗1 can

    chopped

  • chipotle chili sauce or salsa↗1 can
  • jalapeno peppers↗1 can

    diced and drained

  • onion↗1

    chopped

  • garlic cloves↗3

    minced

  • chili powder↗2 tablespoons
  • honey↗1 tablespoon
  • kosher salt (or other coarse salt)↗1 1⁄2 teaspoons
  • ground cumin↗1 teaspoon
  • beef broth↗2 cups
  • French rolls or sandwich bun↗
  • onion↗

    sliced, garnish

  • cilantro↗

    garnish

  • sour cream↗

    garnish

  • tomatoes, slices garnish↗

Step-by-step instructions

    Rinse beef and trim excess fat.

  2. 2

    Put beef in crock pot and reminder of ingredients (through beef broth).

  3. 3

    Cover and cook on low for 8-10 hours.

  4. 4

    Shred meat with forks.

  5. 5

    Return shredded beef to crock pot and serve with sauce.

  6. 6

    Serve on sandwich rolls with sauce and your favorite toppings. Some of our favorite toppings are onion slices, grated cheese, sour cream and extra salsa.
