Orange Teriyaki Tofu

Ingredients

4 serv.
  • firm tofu (not extra-firm)1 lb
  • soy sauce1⁄4 cup

    or 1/4 cup tamari soy sauce

  • rice vinegar3 tablespoons
  • maple syrup3 tablespoons
  • orange juice1⁄2 cup
  • finely grated orange rind2 teaspoons
  • finely chopped fresh gingerroot1 teaspoon
  • garlic, finely chopped2 cloves
  • dry mustard1⁄4 teaspoon
  • chopped fresh coriander or parsley

Step-by-step instructions

    Cut tofu into bite-sized squares.

  2. 2

    Place in shallow baking dish or casserole.

  3. 3

    In small bowl, combine soy, vinegar, maple syrup, orange juice, orange rind, ginger, garlic and mustard.

    Pour over tofu.

  5. 5

    Marinate at least 1 hour OR up to 24.

  6. 6

    Pour marinade into measuring cup.

  7. 7

    Return 1/2 cup (125 mL) to tofu in baking dish and discard the rest.

    Bake in a preheated 375*F (190C) oven about 1 hour, gently stirring and basting every 20 minutes.

    Serve garnished with coriander OR parsley.

    Makes 4 servings.
