Marinated Grilled Pork Chops With Orange Salsa

Very tasty chops made with a citrus based marinade and topped with a wonderful orange and cucumber salsa.

Ingredients

6 serv.
  • center-cut pork chops6
  • Marinade
  • olive oil3 tablespoons
  • lime juice2 tablespoons
  • orange juice2 tablespoons
  • garlic2 teaspoons

    minced

  • salt1⁄2 teaspoon
  • black pepper
  • dried thyme1⁄2 teaspoon
  • Salsa
  • seedless oranges2

    peeled and chopped

  • cucumber1

    peeled, seeded and chopped

  • sweet onions2 tablespoons

    chopped

  • fresh parsley2 tablespoons

    chopped

Step-by-step instructions

    Mix together oil, juices, garlic, salt, pepper and thyme.

    Place pork in large resealable plastic food storage bag.

    Seal bag and shake to evenly distribute marinade.

    Refrigerate up to 4 hours.

    To make salsa, combine oranges, cucumber, onion and parsley in a small bowl; toss lightly, adding salt to taste.

    Cover and refrigerate 1 hour before serving.

    Remove pork from marinade and discard marinade.

  8. 8

    Grill or broil pork 8 minutes on each side or until pork is no longer pink in center. Serve with salsa.
