  • g fresh gingerroot, finely grated20 g

    finely grated

  • thai pink shallots, finely chopped6

    finely chopped

  • ml lime juice100 ml
  • ml lemon juice25 ml
  • g coriander, chopped100 g

    chopped

  • g basil, chopped50 g

    chopped

  • teaspoon garlic, finely chopped1 teaspoon

    finely chopped

  • teaspoons green chilies, finely sliced2 teaspoons

    finely sliced

  • teaspoon red chile, finely sliced1 teaspoon

    finely sliced

  • teaspoons toasted sesame oil3 teaspoons

    toasted

  • ml olive oil50 ml
  • g dark brown sugar15 g

Step-by-step instructions

    Remove the outer layer of the lemongrass, cut off the hard thinner ends and then crush and chop it.

    Put it in the jug blender with the lime leaves, ginger, shallots, lime and lemon juices and blend to a smooth paste.

  3. 3

    Add the herbs, garlic, chillies, oils and sugar and blend again until you get a beautifully green, smooth, thick dressing.
