Island Tropical Shrimp With Fruit Salsa

This is a great Caribbean shrimp dish that I wanted to get on Zaar for the Caribbean. This recipe comes from Walter Scheib, former White House Chef. The warm fruit salsa is a perfect accompaniment & adds to the flavor of this wonderful dish.

Ingredients

4 serv.
  • Shrimp Baste
  • olive oil1⁄3 cup
  • garlic2 tablespoons

    chopped

  • gingerroot1 tablespoon

    chopped

  • lime juice2 tablespoons
  • dark rum2 teaspoons
  • lime zest2 teaspoons
  • cilantro1⁄4 cup

    chopped

  • Italian parsley1⁄4 cup

    chopped

  • chili paste1 teaspoon
  • cumin2 teaspoons
  • coriander1 teaspoon
  • salt and pepper

    to taste

  • large shrimp16

    peeled & deveined

  • Warm Fruit Salsa
  • tablespoon olive oil1
  • tablespoon garlic, chopped1
  • teaspoon jalapeno, chopped1
  • ounces julienne red onions2
  • ounces julienne tomatoes2
  • ounces sliced mangoes2
  • ounces sliced pineapple2
  • ounces sliced bananas2
  • tablespoon cumin1⁄2
  • tablespoon coriander1⁄2
  • ounce lime juice1
  • hot sauce (to taste)
  • cup cilantro, chopped1⁄4

Step-by-step instructions

    In a large bowl- combine all ingredients except shrimp & set aside.

    Go ahead & preheat your grill to medium heat.

  3. 3

    Toss shrimp in baste mix & grill on lightly oiled grill. Turning once, cook 4 minutes on each side.

    Baste shrimp once more before serving.

    Serve on top of warm fruit salsa.

    In sauté pan over medium heat- sauté oil, onions, garlic and jalapeños for 2- 3 minutes.

    Add fruit and tomatoes, cooking for 2 – 3 minutes, don’t stir or over-mix as fruit will break up.

    Add cumin, coriander, lime juice & hot sauce. Cook 1 – 2 minutes, the fruit should be warm, not mushy.

    Add chopped cilantro when ready to serve.

  10. 10

    Serve on top of warm fruit salsa.
