Green Beans and Vidalia Onion Salad

This is from one of our local chefs, John Folse. A great way to use those delicious Vidalia onions when in season. Cook time includes the chill time.

Ingredients

6 serv.
  • (10 ounce) packages frozen cut green beans2 ounce
  • cup sliced vidalia onion1⁄2 cup
  • tablespoon sugar1 tablespoon
  • cup olive oil1⁄2 cup
  • tablespoons white wine vinegar3 tablespoons
  • teaspoon dried mustard1⁄4 teaspoon
  • teaspoon salt1⁄4 teaspoon
  • slices cooked bacon, crumbled4
  • cup swiss cheese, shredded1 cup
  • ground cayenne pepper

Step-by-step instructions

    Cook green beans according to package directions.

    Drain well and chill in refrigerator.

  3. 3

    Put onions in a small bowl and sprinkle with sugar.

  4. 4

    Cover and place in refrigerator to chill.

  5. 5

    In a small jar combine oil, vinegar, mustard, salt and pepper.

    Seal jar and shake vigorously to mix all ingredients.

    Place beans and onions in a large bowl.

    Add crumbled bacon and cheese.

  9. 9

    Shake salad dressing again and pour over bean and onion mixture.

  10. 10

    Toss well and serve.
